With many leftover Christmas goodies, a pan of brownies went untouched and I thought that they would be great in bread pudding. It was a successful experiment. Read more . Just use half the amount of sugar because the brownies will definitely add sweetness. This is surely something different to do with a box of brownie mix. It's even better if you use brownies with chocolate chips in them, because they melt while baking and add an extra ooey gooeyness factor.
Ingredients:
6 eggs, beaten
2 c. whipping cream
2 c. milk
3/4 c. granulated sugar
2 t. pure vanilla extract
1/2 t. salt
6 c. dry stale bread, cubed
3 c. brownies, cubed
whipped cream, optional
chocolate syrup, optional
Directions:
1. Spread brownie cubes evenly on a baking sheet and place in oven.
2. Preheat oven to 350 degrees.
3. (If your bread isn't stale, spread them on another baking sheet and place in oven.)
4. In a large bowl, combine eggs, whipping cream, milk, sugar, vanilla, and salt.
5. In a 13x9 pan, spread half of the bread cubes in the pan.
6. After the oven has preheated, take out the brownies and spread over bread cubes in pan.
7. Spread remaining bread cubes over brownies.
8. Pour custard mixture evenly over bread and brownies, and slightly press down with a spoon or spatula, ensuring even the top pieces are moist.
9. I like to soak my bread pudding for at least 20 minutes (hence the 30 minute prep time), but if you're short on time, even 5 minutes would help.
10. Bake in preheated oven for 40-45 minutes.
11. Serve hot with whipped cream and chocolate syrup, if desired.
