Brown Sugar Glazed Carrots

Another good side dish that is extra special in fall.
Ingredients:
1 lb medium carrot, peeled
3/4 teaspoon salt, divided
2 tablespoons butter or 2 tablespoons margarine
1/2 cup minced onion
1 1/2 tablespoons dark brown sugar or 1 1/2 tablespoons light brown sugar
2/3 cup apple juice
1/4 teaspoon pepper
Directions:
1. Cut carrots diagonally into 1/4 inch thick slices.
2. Cook in boiling water to cover with 1/2 teaspoons salt for 5 minutes or until crisp-tender. Drain and rinse with cold water. Pat dry with paper towels.
3. Melt butter in a large skillet over low heat; add onion and cook, stirring constantly 5 minutes.
4. Add apple juice and brown sugar; cook, stirring occasionally, 10 minutes.
5. Stir in carrots, remaining 1/4 teaspoon salt and pepper.
