Brown Rice Veggie Stir Fry

This is a very light, tasty, and satisfying meal for any season. I've made this recipe several times.
Ingredients:
2 tablespoons water
2 tablespoons gluten-free soy sauce
1 tablespoon olive oil
1 zucchini, chopped
1/2 cup mushroom, sliced
1/2 cup onion, chopped
2 cups brown rice, cooked
1/4 cup carrot, grated
Directions:
1. In a large skillet, combine the water, soy sauce, and oil. Add the zucchini, mushrooms and onion; stir fry for 4-5 min or until crisp tender. Add the rice and carrot, stir fry for 2-3 min or until heated through.
