When your picky 18 yr old daughter tastes a dish and says, Oh my God, this is so good!, you know you have a winner! I wanted to try to make a wholesome summer dish my family would like, so I came up with this. It really is absolutely delicious. You can make it meatless, add tofu, shrimp, and adjust any of the ingredients to your personal taste. Yummm!
Ingredients:
2 cups cooked brown rice
1 cup chopped chicken (tofu, shrimp, or meatless...)
1 cup chopped tomato (i use roma or grape tomato)
6 large basil leaves, chopped small
1 teaspoon minced garlic (i used minced from a jar)
1 teaspoon kosher salt (more or less to taste)
3 tablespoons extra virgin olive oil
1/4 cup roasted salted sunflower seeds
Directions:
1. In a bowl mix all ingredients except rice and whatever protien you choose to use. Let sit about 10 minutes so flavors can mix together. Add rice, either hot or cold depending on if you want a hot or cold dish - and add your protien. Toss together and enjoy. You can adjust the amount of basil. It seems more basil is actually better than less. It gives this dish a really herbal kick. I have found brown rice very easy to cook by using 3 cups water to 1 cup of rice along with a pinch of salt and a few drops of oil, simmering until done to my liking, about 40 minutes, and then pouring off the excess water. Never burns and is never sticky. PERFECT brown rice! This will make 2 big servings if used as a main dish, or 4 good sized servings as a side dish without meat.
