Brown Rice Salad

Yummy! A healthy summer salad that everyone will want the recipe for. This is a well known favourite in my family.
Ingredients:
2 cups brown rice
1/2 cup kikkoman soy sauce
3 spring onions
1 red pepper
1/2 medium onion
1 cup peanuts
1/2 cup sunflower seeds
1/2 cup raisins
3/4 cup olive oil
1 teaspoon grated lemon rind
1 lemon, juice of
1 crushed garlic
1 teaspoon grated gingerroot
Directions:
1. Boil the Brown rice (firm to bite, not soft).
2. then soak in Soy Sauce for at least 2 hours (the longer the better).
3. Add the spring onions, red pepper, onion, and roasted peanuts and sunflower seeds with the raiins mixed inches.
4. Whisk all the ingredients of the dressing with a fork in a cup or jug.
5. Pour the dressing over the salad and stir well.
6. Enjoy!
