Ingredients:
1 cup brown rice
15 oz canned black beans
1 cup corn
1/4 cup scallions
2 tbsn cilantro
2 tsp jalapeno peppers, minced
1 tbsn lime juice
1/4 tsp salt
1/4 tsp pepper
Directions:
1. Cook rice according to directions on package.
2. While rice is still warm, stir in all ingredients. Serve!
