Ingredients:

  • 1 cup brown rice
  • 1 cup corn
  • 1/4 cup scallions
  • 2 tbsn cilantro
  • 1 tbsn lime juice
  • 1/4 tsp salt
  • 1/4 tsp pepper

Directions:

  1. Cook rice according to directions on package.
  2. While rice is still warm, stir in all ingredients. Serve!
