Brown Rice Pudding

Brown rice does make a nice rice pudding too. For a light version one may use skim milk and egg substitute You'll be surprised how yummy this tastes!
Ingredients:
1 cup brown rice rinsed
1 qt milk
1 cup evaporated milk
1 tsp vanilla
1 tsp cinnamon
1 egg
1/3 cup honey
2 to 3 tbs rum or kahula
1/4 cup slivered almonds toasted
1 cup raisins
1/4 tsp nutmeg
Directions:
1. . Combine rice, milks, vanilla and cinnamon in a saucepan.
2. Bring to boil and reduce heat to simmer and cook uncovered 1 hour, stir occasionally.
3. In a bowl mix honey and liquor and egg.
4. Add to rice and then add raisins and almonds.
5. Cook and stir another 20 minutes or till thickened. T
6. op with nutmeg. Serve warm or chilled .
7. Serves 6 to 8.
