Brown rice pilaf
Ingredients:
i did not measure at all when i was making this so amounts are complete guesses
2 cups brown basmati rice
2 large jalapeƱos, chopped small
1 cup chopped fresh cilantro
1/2 cup chopped fresh parsley
1/2 cup shredded coconut
1/2 tsp ginger
1/2 tsp ground coriander seed
1/4 tsp turmeric
1 fat tbsp dijon mustard
1 cup currants
1 cup pine nuts
salt and black pepper to taste
Directions:
1. I have a rice cooker so I just threw it all in at once and let it do its thing. I'm sure you could do the same on the stove top but bring the water to a boil first and add the dry ingredients while the water simmers.
