Ingredients:
1 tbsp olive oil
1/2 onion, chopped
1/2 red bell pepper, chopped
2 cups water
1 cup uncooked brown rice
1/4 cup finely chopped parsley
1 salt
1 ground pepper
Directions:
1. Heat oil in a medium saucepan.
2. Add onion and bell pepper; cook 3 monutes.
3. Add water and rice; bring to a boil.
4. Reduce heat; cover and simmer 50 minutes, or until rice is tender and liquid is absorbed.
5. Fluff with a fork; stir in parsley.
6. Season with salt and pepper if desired.
