Brown Rice Consomme'

Great side to beef or chicken.
Ingredients:
2 (10 1/2 ounce) cans beef consomme
1 small onion, chopped
2 tablespoons butter or 2 tablespoons margarine
1 cup uncooked brown rice
3/4 cup sliced fresh mushrooms
1/2 teaspoon ground black pepper
Directions:
1. Bring first 3 ingredients to a boil in a medium saucepan; stir in rice. Cover, reduce heat, and simmer 30 minutes.
2. Add mushrooms; cover and simmer 20 more minutes or until all liquid is absorbed. Stir in pepper.
