Brown Rice Bean Cauliflower Spinach Casserole

Ingredients:

Directions:

  1. All but first five comprise sauce. Steam cauliflower then use food processor to add all together, adding water for the right consistency and salt and pepper to taste.
  2. Cook rice.
  3. Mix rice, sauce, beans and spinach together in a casserole dish.
  4. Top with grated soy cheese.
  5. Cook for 40 minutes at 350F
