Brown Rice And Tuna Salad

A rice tuna salad enriched with several vegetables.
Ingredients:
1 1/5 c brown rice or other long grain rice will do too.
1/2 c balsamic vinegar.
250 gr cucumbers unpeeled cut in 1 cm cubes, (recipe ask for peeled but i don't do that).
1/2 c small radishes halved.
1.c celery stalk chopped.
60 gr baby rocket leaves.
450 gr tuna in water, drained and flaked.
pepper to taste, ( no salt as tuna is salt enough already).
Directions:
1. Cook rice following packet instructions, drain well, set aside for 10 min to cool.
2. Stirr balsamic through rice and set aside for 15 min.
3. Add all other ingredients to rice add pepper to taste, toss to combine.
4. Serve with or on slices brown bread.
