Brown Rice And Raisins With Chicken Optional

I love Indian food and this is similar to some of their fancy dishes. The ingredients make it a healthy choice if on a diet. It's low fat, with chicken, fruits and healthy nuts. Enjoy!
Ingredients:
1 cup brown rice
1/4 cup dark raisins
1/4 cup golden raisins
1/4 tsp cinnamon
1 tbls olive oil
1/2 cup chopped red onion
1/2 cup chopped celery
1/4 sliced green onion
1/3 chopped cashews
1 cup diced cooked chicken breast (optional)
sea salt to taste
Directions:
1. Cook rice as directed on package. Drain and add raisins and cinnamon. Cover and set aside. Raisins will plump while setting.
2. Heat olive oil in large skillet over medium heat. Add red onion and celery. Cook until soft.
3. Add diced chicken and cook until onion is browned.
4. Add green onions, reduce heat to low, cover and cook an additional five minutes.
5. Stir in rice and raisins, sprinkle with sea salt to taste.
