Brown Rice and Mushrooms

This is a very simple, healthy recipe to use as a side dish. Much softer, more flavorful, and tastier than traditional rice. The rice vinegar gives it a nice flavor
Ingredients:
1 cup brown rice
2 cups vegetable stock
1 (4 ounce) can mushrooms, drained
1 tablespoon olive oil
1 teaspoon rice vinegar
Directions:
1. Combine all ingredients in a medium saucepan. Mix well.
2. Bring to a boil.
3. Reduce heat and cover.
4. Simmer for 45-50 minutes or until rice is tender.
5. Stir, remove from heat, covered and allow to stand for 5 minutes.
