Brown Rice and Lentil Soup

A low fat/low sodium vegatarian soup.
Ingredients:
2 1/2 cups low fat/low sodium chicken broth
3 cups water
1/2 cup brown rice
1/2 cup lentils
2 cups carrots, sliced
15 oz. chopped tomatoes
1 1/2 tsp. minced garlic
1/4 tsp. basil
1/4 tsp. oregano
1/4 tsp. thyme
1 tbs. parsley
2 tbs. cider vinegar
Directions:
1. Combine all ingredients in a pot. Bring to a boil.
2. Turn down heat to simmer and cook about 40 - 45 minutes until rice, lentils and carrots are done.
3. Add parsley and vinegar at the end.
