Bronze Dyed Pasta and Vegetable Bake With Marinade

Ingredients:
500 g tri-colored pasta (bronze dyed pasta)
2 red bell peppers, diced
1 bunch spring onion, diced
1 red onion, diced
50 g italian tomato paste
6 tablespoons olive oil
6 tablespoons balsamic vinegar
200 g low-fat cheddar cheese
Directions:
1. Prepare vegetables.
2. Mix all vegetables, olive oil and balsamic vinegar.
3. Spread mix on baking tray.
4. Sprinkle with cheese.
5. Heat oven to 230°C.
6. Cook pasta al dente.
7. While pasta is cooking, bake the vegetables in oven for about 10-15 minutes.
8. Drain pasta, serve on plates.
9. Serve vegetable bake on top.
