Broiled Ginger Chicken

This is an easy meal. Have the marinade ready before you split the chicken (instead of the order that the directions are in) and your pretty much home free. Make your sides while the chicken is marinating and broiling.
Ingredients:
1 -2 1/2 lb chicken
1 teaspoon chopped ginger
1 teaspoon minced garlic
2 teaspoons olive oil
1 bay leaf
1/2 teaspoon dried thyme
1/4 cup lemon juice
to taste salt and pepper
2 ounces melted butter (optional)
Directions:
1. Split chicken in half.
2. Blend remaining ingredients except butter.
3. Place chicken in a zip lock bag and pour the marinade over the chicken halves.
4. Exhaust as much air as possible, seal, and set aside for 15 minutes.
5. Drain chicken and broil on both sides while basting with the marinade. Continue cooking and basting for about 25 minutes or until chicken is cooked.
6. Serve with melted butter if desired.
