Broccolli Baked Mac And Cheese

This recipe combines the two things that were made for chesse sauce (mac and broccoli) into one delicious dish. Serve with grilled chicken for a complete meal.
Ingredients:
8 oz elbow macaroni, cooked according to package directions to al dente
2 c. broccoli florets, blanched and finely chopped
3 tbs butter
3 tbs flour
3 c. milk
1/2 c. yellow onion, finely diced
1 bay leaf
1 tsp paprika
1 egg
14 ounces sharp cheddar, shredded
1 tsp of dijon mustard
s & p to taste
panko bread crumbs
Directions:
1. Preheat oven to 350 degrees.
2. Melt the butter in an oven safe pan. Add flour to create a roux. Slowly add milk until fully incorporated. Add onion, bay leaf, and paprika. Simmer for ten minutes and remove the bay leaf.
3. Beat the egg in a small bowl and add a little bit of the milk sauce to the egg. Continue adding small amounts until sauce is incorporated into the egg, then add the egg mixture to the milk sauce. Stir in the cheese reserving some for the topping. Taste the sauce and add salt and pepper according to your taste. Add the macaroni and broccoli into the cheese sauce and stir. Top with reserved cheddar cheese and sprinkle the bread crumbs on top. Bake for 30 minutes. Cool slightly and serve.
