Broccolini With Mozzarella Lemon And Anchovy

Full on flavour salad serves 4 as a starter or 2 as a main dish. Looks great and is guaranteed to please everyone!
Ingredients:
1 lemon
1 tsp salt
1 tsp sugar
200g tenderstem broccoli
300g mozzarella
8 anchovy fillets
2 tbs extra virgin
10 mint leaves
10 flat leaf parsley leaves
10 celery leaves
freshly ground black pepper
1 red chilli thinly sliced
Directions:
1. Wash and thinly slice the lemon (thinner the better) place on a plate and sprinkle with the salt and sugar. Leave for 20 minutes or more.
2. Steam broccoli over hot water for a few minutes only. Rinse in cold water to stop cooking.
3. Arrange broccoli on serving plate with chunks of mozzarella.
4. Mash anchovy in olive oil and mix with lemon slices and chopped herbs. Sprinkle over broccoli.
5. Finish dish with black pepper and chilli.
6. Remember to eat the lemons!
