Broccoli Soup

Ingredients:

  • 2 cups of broccoli
  • 4 cups of water
  • 1 salt to taste

Directions:

  1. Bring water to a rapid boil in a pot.
  2. Pre-season with salt.
  3. Add broccoli heads to water, add some more salt on top and cover pot with lid.
  4. Let boil for 4-5 minutes.
  5. Strain broccoli, saving water in a large bowl.
  6. Add broccoli to a blender.
  7. Add saved water to broccoli in blender, filling water to 3/4 the height of broccoli.
  8. Blend to smooth.
  9. Add salt to taste.
