Broccoli Soup

Ingredients:

  • 1/2 cup chopped onion
  • 2 cup beef broth
  • 1/4 tsp pepper
  • 1 cup milk

Directions:

  1. Cook celery, onion and broccoli in the broth until all is soft. Add salt and pepper. (I don't usually add salt) Once everything is soft, puree in a blender until smooth. Stir in milk and heat but do not boil. Approx 1 quart.
