This slaw is very healthy and can be made low fat. It has a unique taste with the toasted walnuts. I really love this slaw.
Ingredients:
1c mayonaise (low-fat is okay)
1/4c raspberry vinegar
1/4c sugar
1/2t salt
1/4t ground pepper
6c (1-1/14 lbs.) broccoli florets, cut or broken in half-inch pieces
1/2c dried cranberries
1/2c golden raisins
1/2c chopped, toasted walnuts
1 medium carrot, peeled and grated
Directions:
1. In a large bowl combine the mayonnaise, vinegar, sugar, salt and pepper, and stir until smoothly blended.
2. Blanche the broccoli for 1-2 minutes.
3. Add the broccoli, cranberries, raisins, walnuts and carrot, then stir and toss until the ingredients are evenly coated with the dressing.
4. Chill before serving.
