I made a quick and easy version of broccoli salad w/ a lot less fat and calories than the norm.
Ingredients:
4 cups broccoli, steamed
2 tbsp. light mayo
1 tbsp vinegar (i used a tomato balsamic)
3 tbsp. sunflower seeds, sheeled (i used unsalted)
Directions:
1. Drain broccoli and set in freezer to cool for 5 minutes.
2. Mix together other ingredients.
3. Add cooled broccoli and put in the fridge 'til ready to serve.
