Another variation of broccoli salad.
Ingredients:
1 cup mayonnaise
1/2 cup sugar
2 tablespoons white vinegar
1 teaspoon dijon mustard
1/2 teaspoon paprika
1/2 teaspoon pepper
salt, to taste
2 heads broccoli, washed and cut into bite sized flowerets
1 cup chopped purple onion
1 cup sliced mushrooms
11 ounces mandarin oranges, drained
1/2 cup cashew pieces
1 cup cubed sharp cheddar cheese (can use mild cheddar or any cheese)
Directions:
1. In a small bowl, whisk together all the dressing ingredients and set aside.
2. In a large mixing bowl toss together all the salad ingredients.
3. Pour dressing over salad and toss well to coat evenly.
