Easy, delicious side dish that would go perfect with chicken or serve it up in a big bowl to make a vegetarian meal out of it. Each serving is approximately 175 calories.
Ingredients:
2 cups broccoli
1 can cream of celery soup
1/4 cup reduced fat shredded cheddar cheese
1/2 cup skim milk
1 cup rice, cooked
1/4 cup chopped onion
1/4 cup chopped red pepper
1 jalapeƱo, chopped (optional)
salt and ground pepper to taste
4 dashes dried basil
2 tablespoons reduced-fat grated parmesan cheese
Directions:
1. Pre-heat oven to 300 degrees F
2. Boil broccoli, onion and red pepper until slightly cooked on high heat
3. Add ground pepper and salt, to taste
4. Reduce heat and pour in cream of celery soup, cheddar cheese, jalapeƱos (if using) and milk and mix well
5. Mix in cooked rice and stir everything together
6. Pour mix into a baking dish and sprinkle Parmesan and basil on top
7. Bake for 15 minutes and serve hot
