Is there such a thing as too much broccoli intake? with these muffins you will get your daily fill for sure
Ingredients:
2/3 pack of frozen broccoli
1 medium size onion
1/3 cup grated cheese (optional)
4 eggs
1/3 cup oil
3/4 cup whole wheat flour
1 tsp oregano
1 tsp parsley
1 tsp garlic powder
1/8 tsp salt
Directions:
1. 1. Cook broccoli in microwave as directed, chop up onion, blend in blender or food processor.
2. 2. Beat eggs and combine with grated cheese and oil.
3. 3. combine flour and spices, add to egg mixture.
4. 4. Fold in broccoli into batter.
5. 5. Fill muffins 3/4 way. Bake at 200C for 15-20 min.
