This made a light and unusual side dish, tasty and easy. From the instruction booklet for Visions Cookware.
Ingredients:
16oz broccoli
1/4 cup olive oil
8oz fresh mushrooms
2 cloves garlic
3/4 tsp black pepper
dash oregano, opt.
7 eggs
1/2 cup fresh parmesan cheese
1/2 cup monterey jack or swiss
Directions:
1. While broccoli cooks till partially done - still crisp, slice mushrooms, mince garlic, and grate cheese.
2. Heat oven to 350.
3. Cut broccoli into bite-sized pieces.
4. Heat oil in a 10 skillet. Add broccoli, mushrooms, and garlic; cover and steam for 3 minutes.
5. The original recipe said to cook this in an oven-going skillet, but I poured it into a sprayed casserole dish at this point.
6. Lightly beat eggs; add seasonings. Pour over vegetables.
7. Sprinkle with Parmesan and bake 25-30 minutes or until set.
8. Sprinkle with other cheese and let sit for 5 minutes.
