Broccoli Cheese And Chicken Soup

This dish is another office favorite! Great in the winter. Everyone loves this combination of Broccoli, cheese and chicken. Great with toasted French loaf! Not too great for the diet!
Ingredients:
115g butter
125g flour
2605ml water
3 chicken stock cubes
910g skinless boneless chicken fillets - cut into bite-size pieces or strips
2 heads fresh broccoli cut into florets or finer
salt & ground black pepper to your taste
235ml light cream
340g shredded cheddar cheese (sharp or not)
1 onion
2 cloves of garlic
pinch of cayenne pepper
Directions:
1. In a large pot, melt the butter over medium heat. Mix in the flour, stirring constantly until a thick paste forms. Remove from pot, and set aside.
2. in the same pot fry onions and garlic - not too brown
3. add the water, chicken stock cubes, chicken broccoli, salt, cayenne pepper and pepper.
4. Bring to the boil over high heat.
5. Reduce heat to medium low and simmer for about 45 minutes
6. Add a little of the soup mix to your flour mixture, and mix to ensure no lumps. once smooth add the flour mixture to the soup a bit at a time until soup thickens
7. Simmer for 10 minutes
8. Reduce the heat, and stir in the cream
9. Mix in the cheese 1 cup at a time, and stir until melted.
10. Ready to serve!! Enjoy
