Ingredients:
1/2 cup light mayonnaise
1 tablespoon sugar
2 tablespoons rice wine vinegar
1 teaspoon salt
1/2 teaspoon ground ginger
1 (12-ounce) package pre-washed broccoli and cauliflower florets blend, coarsely chopped
1/2 (10-ounce) package shredded carrots
1/4 cup roasted peanuts, chopped
Directions:
1. Whisk together first 5 ingredients in a large bowl. Add broccoli mixture and carrots, tossing to coat. Sprinkle evenly with nuts.
