Very low calorie, extremely healthy soup. It's only 150 for a bowl so fill up. Make a pot and add pasta for other family members who need more calories.
Ingredients:
6 cups broccoli, florets
2 tbsp parmigiano reggiano
2 cups spinach leaves
3 tbsp extra virgin olive oil
1 cup fresh basil
1 fresh lemon juice for garnish
1 clove fresh garlic
Directions:
1. Boil Broccoli florets in heavily salted water
2. Save Broccoli Broth
3. In food processor:
4. Cup Basil
5. 2 cups Spinach
6. Garlic
7. Olive Oil
8. 2 Tbsp parmigiano reggiano
9. You may need to add some broth if more liquid is needed
10. Add cooked broccoli and broth in ration 2 - 1.
11. Pulse until smooth, but not completely pureed.
12. Serve with grated cheese, dollop of olive oil, and a squeeze of fresh lemon...
