This is the way my mom always made broccoli when i was a kid...it still takes me back...definitely comfort food for me... a hearty Italian peasant dish!... *Goes well with some white fish fillet like halibut or flounder.
Ingredients:
1 bunch of fresh broccoli- cut into large florets, stem peeled and sliced
1 onion roughly sliced
a handful of baby yukon gold potatoes cut in 1/2 (or one large potato cut into small chunks)
1 tomato roughly chopped (or a handful of grape tomatoes cut in 1/2)
5 or 6 black kalamata olives
olive oil
salt
Directions:
1. Place all ingredients in a medium saucepan or a large skillet with a lid.
2. Sprinkle with salt to taste (about 1 tablespoon).
3. Drizzle with olive oil (drizzle around pan twice).
4. Add about 1/4 cup water and toss well.
5. Cover and let simmer on medium high heat for about 15 minutes, or until broccoli and potatoes are tender and onions are translucent (stir occasionally).
