Broccoli And Onion Casserole

Cream cheese sauce is what gives this casserole the great flavor.
Ingredients:
1 lb. fresh broccoli
2 cups onions or leeks, chunked
4 tbsp. butter
2 tbsp. flour
1/4 tsp. salt
dash of pepper
1 cup milk
3 oz. cream cheese
1 cup sharp cheddar cheese, grated
Directions:
1. Cut broccoli into bite size pieces and cook in boiling water for 3 minutes, drain.
2. Blanch onions or leeks 2 minutes in boiling water, drain.
3. SAUCE: Melt butter over medium heat, add flour, salt, pepper and milk.
4. whisk until smooth. Reduce heat and blend in cream cheese until smooth.
5. Layer vegetables and sauce into a 2 quart casserole. Top with grated cheese.
6. Cover and bake at 350ºF for 35 minutes
