Broad Bean and Rocket Salad With Bean Butter

Ingredients:
2 (400 g) butter beans (drained and rinsed)
4 teaspoons creamed horseradish
5 tablespoons olive oil
1 lime (zest and juice)
175 g broad beans (fresh or frozen cooked and peeled)
2 tablespoons walnut oil
70 g rocket
lemon wedge
Directions:
1. Whizz butter beans with horseradish olive oil lime zest and juice and 3 tablespoons warm water until smooth and creamy.
2. Toss broad beans in walnut oil, add rocket and toss again.
3. Pile the butter bean mix into a shallow serving dish and put the bean and rockets salad in large bowl, season well with black pepper and serve with lemon wedges and bread sticks.
