Found in Polly Clingerman's The Kitcen Companion . She calls these rock cakes gems and they are scrumptious with a cup of tea or coffee or milk . A real treat! Enjoy
Ingredients:
the dry
2 cups sifted flour
2 tsp. baking powder
1/2 tsp. mixed spice--see notes
1/2 tsp. nutmeg
pinch salt
the wet
1/4 cup butter
2 table. solid vegetable shortening(i usu. do all butter 6 table.)
1/2 cup brown sugar, packed
2 table. candied peel, chopped & .mixed(candied ginger)
1/2 cup raisins (i use currants)
the grated rind of a lemon
1 egg, lightly beaten
6 table. milk
note--british mixed spice- ingredient found in british recipes for baked goods, meat dishes and casseroles. clingerman says that allspice is a satisfactory substitute, but this homemade combination is better . i agree with her.
1 table. cloves
1table. mace
1 table. ground nutmeg
1 table. coriander seeds
1 table. allspice berries
a small piece of cinnamon stick
grind the spices to a fine powder. keep in an airtight jar.
Directions:
1. In a large bowl, whisk together the dry ingredients. Cut in 1/4 cup of butter and the veg. shortening until mixture looks like bread crumbs. Stir in the rest of the ingredients. Do not over-stir.
2. Divide the dough into 8 portions, and shape each into a slightly flattened ball. Place on a greased baking sheet or parchment or silpat. Space 1 1/2 inches apart. Bake at 400 degreees for 15 minutes or until pale golden and firm. Somebody put the teakettle on! Cool on a rack. Enjoy!
