This is unbelievably good. So many magnificent flavors going on here. A sure fire hit at your card or football parties. Enjoy
Ingredients:
3 tablespoons olive oil
6 pounds beef brisket cut into 1 cubes
2 pounds pork breakfast sausage with sage
2 large white onions finely chopped
3 beef bouillon cubes
2 small cans chipotle peppers in adobo sauce chopped fine
2 squares bittersweet chocolate
14 ounce can salsa verde
24 ounces dark beer
1 ounce tequila
juice from one lime
1 teaspoon salt
6 tablespoons freshly ground black pepper
3 tablespoons liquid smoke
6 tablespoons chili powder
6 tablespoons ground cumin
8 green onions sliced
2 cups shredded mexican four cheese blend
Directions:
1. Heat olive oil in large cast iron pot on high heat.
2. When hot add beef and cook until browned stirring occasionally.
3. Remove from pot and set aside.
4. Drain any liquid from pot.
5. Return pot to stove and on medium high heat then cook sausage and onion.
6. Return beef to pot along with all remaining ingredients.
7. Stir well then cover and simmer on medium low heat for 4 hours stirring occasionally.
8. Ladle into bowls and garnish with shredded cheese blend and sliced green onions.
