Ingredients:
1/2 cup mushrooms, chopped
1 green onion, chopped
1/2 potatoes, mashed
1 tsp unsalted butter
1 tbsp low-fat milk
1/2 cup spinach, fresh & stemmed
4 eggs
1/4 tsp salt
1 black pepper, freshly ground
1/2 cup cheddar cheese, grated
Directions:
1. In an omelette pan, saute mushrooms and green onions until soft. Add mashed potatoes and cook until golden brown. Add spinach to wilt slightly. Add eggs and cook until done. Top with cheddar cheese.
