This is a great salsa that isn't too spicy but is full of flavor.
Ingredients:
4 medium tomatoes
1 medium size tomatillo
1 medium size lime
1 green chili, diced (yields about 1 tablespoon)
1 small white onion
4 small garlic cloves
1 teaspoon black pepper
1 teaspoon vegetable oil
1 15 oz can of corn, drained
1/2 cup fresh cilantro
Directions:
1. Quarter tomatoes. Process 1/2 a tomato at a time in the food processor, pulsing briefly so they are not over-processed. Add to a large mixing bowl. Process the onion and garlic individually and stir into the tomatoes. Add the corn (don't process it). Squeeze the juice from the lime and add it to the bowl.
2. The chili requires a bit of preparation. Blacken the chili over an open flame. Let it cool then scrape off the blacked skin. Cut off the stem and cut it open. Remove and discard the inner contents. Process the remainder of the chili then add to the bowl (you can substitute 1 tablespoon of process jalapeƱos if you do not wish to do the chili preparation).
3. Add the remaining ingredients and mix everything well. Enjoy!
