Third generation recipe! This Xmas cake is redolent with fruit. Make well ahead and let it age. It has become tradition in our house for the whole family to make it 3 weeks before December 25.
Ingredients:
1 cup butter
1 1/2 cups white sugar
3 cups flour
3 eggs
1 teaspoon salt
2 teaspoons baking powder
2 teaspoons vanilla
1 1/4 cups mixed peel
3 cups mixed candied fruit
1 lb white raisins
8 ounces red maraschino cherries
8 ounces green maraschino cherries
1 1/4 cups glace red cherries
1 1/4 cups glace green cherries
4 pineapple rings, yellow color (save for top of cake)
4 ounces walnut meats
4 ounces pecan halves
Directions:
1. Preheat oven to 250 Fahrenheit.
2. Keep half of red cherries and pecans for top.
3. Make the batter first and then put in the fruit.
4. Add one half cup of warm water and mix.
5. Add batter to angel food pan lined with buttered-both-sides parchment paper.
6. Bake at 250 Fahrenheit for 4 hours.
