Breezy Banana Caramel Pie

Have a prepared pie shell available when you start this recipe (either homemade or store-bought) and you are half way home. Recipe courtesy of Chef James Brockman of right .....
Ingredients:
1 prepared pie shell
4 bananas, ripe
8 ounce can sweetened condensed milk
1 cup whipping cream
1/8 cup powdered sugar
1 teaspoon vanilla
Directions:
1. Fill the pan of a double boiler with water and bring to a boil.
2. **I feel that this direction is misleading since you won't be able to put the bowl of the double boiler in place if there is too much water in the pan. Use your good judgment!
3. Pour the sweetened condensed milk Into the bowl of the double boiler.
4. Reduce heat of pan to simmer and cook for 1 1/2 hours, stirring often.
5. Add water to pan, if necessary to keep pan from burning.
6. When the caramel is thick and darker, remove from heat and let cool slightly.
7. Slice the bananas into the prepared pir crust..
8. Spread caramel evenly over the bananas.
9. Chill until cold, at least 4 hours.
10. Whip the cream with the sugar and vanilla until stiff peaks form.
11. Spread the whipped cream atop the pie and serve.
