a delicious breakfast or brunch that is so quick and easy to make that it almost seems to good to be true!
Ingredients:
olive oil spray
3 whole eggs
3 tbsp lite milk
a good pinch of paprika
2 rashers of middle bacon
2 tortilla wraps
2 tbsp bbq sauce
250g strawberries
Directions:
1. Lightly whisk Eggs and Milk together in a bowl, sit to the side.
2. Heat a frying pan over a medium heat and cook Bacon rashers to your liking, remove from pan and let rest on paper towel.
3. Wipe out the pan with a piece of paper towel and start warming your Tortilla Wraps over a medium heat, plate when done.
4. Meanwhile, heat and lightly spray another pan with Olive Oil and pour Egg mixture in, adding Paprika at this time. Cook 'Scrambled Eggs' to your liking.
5. Layer Bacon and Eggs on top of Tortillas, add BBQ Sauce and roll.
6. Serve with Strawberries on the side and a cup of Coffee or mug of hot Tea.
7. for a pescetarian option, you can swap the Bacon and BBQ Sauce for Smoked Salmon and Hollandaise ... so yum!
