I made these this morning for the children's ministry workers at Church. My son grabbed on and said it was the best thing he has ever tasted! You can make all at once or one at a time.
Ingredients:
2 lbs sausage (i used jimmy dean)
16 oz sharp cheddar cheese, grated
18 eggs
1/2 cup half and half
salt to taste
8 burrito size tortillas
Directions:
1. Cook sausage in round patties. After flipping sausage break up into 4 to 6 pieces. (you could brown it into crumbles but I prefer the chunks for this recipe) This can be done ahead of time.
2. In a large bowl beat eggs, half and half and salt. Pour into large non-stick pan and cook until fluffy and still moist.
3. Divide sausage onto the 8 tortillas, top with cheese and eggs.
4. Fold two opposite edges ever about 1 1/2 inches and roll from the flat edges into enclosed packets. Secure with toothpicks, cut on the diagonal in the center.
5. Each tortilla makes 2 servings.
6. Great for a crowd!

8. You could just have everything on hand and ready and throw them together one at a time!
