Ingredients:
1 tablespoon butter
1 cup diced cooked potato
4 eggs beaten
4 slices of bacon cooked and crumbled
4 flour tortillas (6 inch) warmed
3/4 cup shredded cheddar cheese
1/2 cup pace picante sauce
Directions:
1. 1) Heat the butter in a 10 inch skillet over medium heat. Add the potato and cook until its lightly browned.
2. 2) Add the eggs and bacon. Cook and stir with a fork until the eggs are set but still moist.
3. 3) Spoon about 1/2 of the potato mixture down the center of each tortilla. Top with cheese and Picante Sauce.
4. Fold each tortilla around the filling
5. Easy Substitution Tip: Substitute crumbled cooked pork sausage for the bacon.
6. Makes 4 servings
