This is something made by me and my three year old son Ryder. Everyone loves pizza especially Ryder and Jake so they get excited to help. Ryder and I don't measure our items or time things that is just our nature. Read more . Also there are times that things get thrown in while back is turned. I use allot of leftover grilled foods from the night before for breakfast meats combine fresh veggies. So have fun with this and I hope you enjoy.
Ingredients:
5 eggs
1/2 to 1 cup diced ham
half small onion
5 steams of asparagus
3 cloves garlic
1 cup fresh baby spinach
1/2 cup crumbled, shredded cheddar cheese
Directions:
1. Prep:
2. Slice thin slices of half onion, dice ham into cubes, chop garlic to desired size. Clean asparagus and chop into half inch sections. Crack eggs in bowl and scramble.
3. Cooking:
4. Med-High Heat.
5. In a skillet I coat with olive oil and start carmelizing onions. Add asparagus, ham and garlic when onions are almost ready. I am using left overs on the ham or it is pre-cooked so it does not take long to brown or heat up.
6. When all these items are brown make sure not to burn the garlic add the scrambled eggs. Just pour all over the skillet covering the onion, asparagus, ham mixture.
7. Add the spinach and cheese over the mixture in skillet. You can season at this time to your taste. Turn on Broiler/Oven and place skillet and all in for 5 to 10 minutes. You are looking for the spinach to wilt and the cheese to melt.
8. Remove from oven/broiler pizza should slide out of skillet and be golden brown on the bottom and firm enough to sit up on a cutting board and cut with a large knife or pizza cutter. Serve and enjoy.
9. Hope you enjoy.
