All your favorites in one skillet. Great breakfast meal. Cheesy,crunchy and spicy.
Ingredients:
3 eggs beaten
2 slices of bacon
1/2 cup of pork sausage
1 medium potato
sharp cheddar cheese
queso fresco or monterey jack
onion, bell pepper (optional)
salsa(optional)
Directions:
1. Peel & dice potato, fry in skillet until browned & crispy. set aside
2. Fry up bacon & sausage & set aside.
3. Add eggs to nonstick pan with a tbsp of butter.
4. Scoot the eggs towards the middle of the pan and tilt pan to get uncooked portion to the outer edge. *Note -This may have to be done a couple of times to get all the uncooked egg to the edge.
5. When the eggs are just about done, spread the potatoes, crumbled bacon, and sausage on top. (optional -Onions & peppers)
6. Sprinkle cheeses on top.
7. If you have a skillet that can be put in the oven, place skillet in a 300 degree oven just long enough to melt the cheese. If not, then slide your pizza onto a plate and place in microwave to melt the cheese.
8. Drizzle with your favorite Salsa and enjoy.
