I have trouble sitting down to eat breakfast, this one you can grab and take with you, snack on, sprinkle over yogurt and is a fairly simple recipe. My five year old loves it, plain Mom.
Ingredients:
2 cups oats
1 cup slivered almonds
i cup dried cranberries
1/2 cup shredded coconut (unsweetened)
1/4 tsp. salt
1tsp. vanilla
1/2 tsp. cinnamon
1/2 stick of butter
1/4 cup honey
1/4 cup brown sugar
Directions:
1. Mix Oats, almonds, cranberries, salt and cinnamon in a large bowl.
2. Cook butter and honey over low heat on stove until melted, add brown sugar and vanilla, stir ingredients together then add into oat mixture stir until blended. Oil large baking pan, Bake 400 degrees for 10-12 mins. Make sure doesn't burn, that last minute is vital in making sure its not overly baked. Sprinkle flaked coconut over granola while still hot in the pan.
