Breakfast Easy Sandwich

It is tasty and easy. Also great for picnics!
Ingredients:
for the biscuits
3 cups all-purpose flour
1 tbs baking powder
2 tbs granulated sugar
1 ts baking soda
1 ts salt
2/3 unsalted butter, at room temperature
1 cup buttermilk
for making sandwich
16 slices cheddar cheese, 1/8 inch thick
8 slices cooked ham, 1/4 inch thick
8 slices tomato 1/4 inch thick
Directions:
1. Preheat oven to 425°F. Line a baking sheet with aluminum foil.
2. To make the biscuits, sift together the flour, baking powder, sugar, baking soda and salt. Add the butter and, using floured fingertips work it in until crumbly. Add the buttermilk and stir until a cohesive mass forms.
3. Place on a floured work surface and knead gently 10 times.Pat into a rectangle about 1/2 inch thick. Cut out as many biscuits as possible. You will need 8 biscuits in all.
4. Place the biscuits on the prepared baking sheet. Bake until golden, 15-18 minutes. Remove from the oven and let cool. Leave the oven set at 425°F.
5. Split the biscuits in half horizontally, leaving the bottom halves on the baking sheet. place on each bottom a slice of cheese, a slice of ham, a slice of tomato and then another slice of cheese. Set the biscuit tops in place.
6. Drape a sheet of aluminum foil loosly over the sandwiches and bake until cheese melts, 8-10 minutes. Remove from the oven and serve.
