Savory and unconventional cookies for breakfast on the go.
Ingredients:
1 cup flour
1 cup cornmeal
2/3 cup sugar
1/2 tsp salt
1 1/2 tbsp baking powder
1/2 tsp rubbed sage
1/2 tsp old bay seasoning
1 pound bulk sausage
1 pound sharp cheddar, shredded
1/2 pound velveeta, shredded
2 eggs, slightly beaten
Directions:
1. Preheat oven to 350*F.
2. In a large bowl; mix first 7 ingredients well.
3. Tear up sausage into dry mix; toss to coat.
4. Tear up sausage some more, using dry mix to coat as you go, until sausage is finely torn and coated.
5. Add cheeses; fluffing and mixing by hand to make a loose conglomerate dough.
6. Add eggs; mix by hand until just blended.
7. Fashion walnut size balls and place them on an ungreased lipped cookie sheet one to two inches apart.
8. Bake for 20 minutes.
9. Cool for 2 minutes before removing from cookie sheet.
10. Store refrigerated. Microwave a few seconds to warm.
