Ingredients:
1 tablespoon olive oil
2 red onions, chopped
2 teaspoons paprika
1 teaspoon ground coriander
1/2 teaspoon chili flakes
salt and pepper
2 (400 g) cans chopped tomatoes
1 (400 g) can butter beans
1 (400 g) can cannellini beans
2 tablespoons balsamic vinegar
Directions:
1. Place oil, onions, paprika, coriander, chilli, salt and pepper into medium saucepan.
2. Cook over medium heat for 5 minutes or till onions are soft.
3. Add tomatoes, simmer on low for 15 minutes.
4. Add beans and balsamic vinegar.
5. Cook 5 more minutes till beans are warmed through.
6. Serve with toast.
