I was looking for something to cook for breakfast one morning when I had guests and hadnt made it to the grocery store. I came up with this adaptation of another zaar recipe I had bookmarked. It turned out delicious and its super easy! It would be good with onions, tomatoes, or even mushrooms too! I would try it with whatever you have lying around.
Ingredients:
8 links breakfast sausage (i used the pre cooked kind!)
2 cups hash browns (from the freezer section)
1 (8 ounce) can cheese soup (i believe its 8 oz..whatever the normal can size is)
4 eggs
1/4 cup milk
1/2 tablespoon mustard (optional)
1/2 teaspoon cajun seasoning (tony chachere's to taste) or 1/2 teaspoon season-all salt (tony chachere's to taste)
1 dash garlic powder
1/2 cup shredded cheese
Directions:
1. Preheat oven to 350 degrees.
2. Defrost hashbrowns then spread over bottom of small casserole dish.
3. Beat together mustard, eggs, milk, cheese soup, and seasonings.
4. Pour over hashbrowns.
5. Next slice up sausage into bite size pieces over top of egg mixture. (if using fresh sausage be sure to cook thoroughly ahead of time).
6. Bake at 350 for 35-50 mins depending on dish size. It will set in center and start to crisp around edges when ready.
7. Now sprinkle with shredded cheese and enjoy. I eat mine with ketchup.
